Banana Pudding Cookie Recipe
½ cup nilla wafers, broken into smaller pieces (graham crackers work, too!)
½ cup white chocolate chips
Heat oven to 350F and grease or line a baking sheet.
In a large bowl mix butter, sugars and Jello pudding mix together until smooth, then stir in egg and vanilla and mix until smooth and fluffy.
Add flour, salt and baking soda, and mix just until the dough is shaggy. Stir in the nilla wafers and white chocolate chips and mix until well distributed through the cookie dough.
Scoop the dough directly onto the baking sheet 2-3” from each other to allow for some spreading in the oven. Bake at 350F for 10-12 minutes until golden brown around the edges.
